Understanding distillation
Distillation is usually carried out in a column, using multiple condensation and evaporation cycles to separate the alcohol from the washing liquid. The alcohol vapor produced by the heating kettle rises to the column, where it passes through the bubble cap and, depending on where you are running, encounters a lower standard alcohol bed on the board. When hot steam encounters the liquid bed, the heat is dispersed, thereby increasing the temperature of the liquid bed and generating more steam.
This heat transfer phenomenon occurs on each board. The liquid temperature is low. Steam has a higher temperature. The higher purity ethanol becomes vapor and is condensed in the next cycle (each plate is considered a cycle). The more plates per column, the higher the degree of purification.

Choose the number of boards
If you want to make vodka, Degon recommends using at least 18 plates. More plates allow more phase changes, creating authentic and pure vodka. However, more boards do require longer runtimes.
For whiskey manufacturers, the fewer plates the better, because whiskey needs more flavor than purity.
