The gel strength test is a procedure used to evaluate the texture and quality of gels, especially in food industries like the surimi industry.
Purpose: The gel strength test measures the ability of a gel to withstand deformation under an applied force. It is commonly used to assess the texture and consistency of gels, such as those formed from proteins in surimi (a paste made from fish or meat).
Principle: In the test, a punch probe of a specific diameter and length is used to compress the surface of a gel specimen at a constant deformation rate, until puncture occurs. Normally the speed used is 60mm/min and probe φ5mm.
Gel strength is based on force×distance, thus having a unit of “gcm”.
